[6:24] Three things about health and diet that is cutting edge

[7:18] 90% of all the cells that make us are non-human.

[7:27] 99% of the genetic material that is in us are not human genes.

[7:43] Human genes are not numerous. The key to most things is whether a gene is turned off or on (epigenomics).

[8:02] Bacteria control much of what happens to us. We’re condominiums/homes to bacteria. We need to keep their “home” in great shape to benefit us.

[11:11] Figure out what your “bugs” want to eat.

[12:03] Good bugs vs bad bugs

[13:17] Feel good hormones are manufactured by bacteria.

[13:32] Bad bugs send messages to the brain so that we eat the foods they like → simple sugars and saturated fats.

[15:44] All the bacteria are female. We were inoculated by our mothers when they gave birth to us with her set of bacteria.

[18:45] Skin is a good measurement of what you’re feeding your microbium.

[19:09] Raw food is a good diet, but it is hard to keep up. You can spot a raw foodist by they skin → they glow.

[24:17] Plants don’t want to be eaten so they’ve worked out defense systems agaist their predators.

[26:12] All plants have lectins (bad). The longer we have been eating a plant, as a species, the more our bodies have become accustomed/tolerant to those lectins. We are used to eating leaves and roots (taro, jicama, yuca, etc.).

[27:20] Grains and beans contain lectins that we’re not used to. These lectins are pretty nice. Rice is the lectin of the castor bean. A few molecules in rice will kill human beings by coagulating their blood.

[28:42] Cooking and rinsing beans helps, but it doesn’t remove all the lectins.

[35:43] Get a pressure cooker.

[39:19] Problem with most gluten-free foods is that they are sugar-delivering devices.

[40:24] Look for resistant starches as the next go-to food.

[46:35] Act like an Italian, Greek, or Spanish person → bring olive oil to the table and pour it on everything.

[46:56] Eat butter from France, Italy, or Switzerland.

[47:18] Avocados are great for you.

[47:35] You need to have oils to absorb nutrients in vegetables you eat.
